Spring
has sprung! And there is a lot of celebrating going on around
here! When there is not a lot of yard work going on, that
is. :-) My mother-in-law often cooked lamb in the spring,
so I always pull out this recipe when my herbs start coming up and it
gets warm enough to grill. I use this marinade on chicken breasts
as well as lamb chops. Yum!
3 Tablespoons chopped fresh thyme or 2 teaspoons of dried
1 Tablespoon of lemon juice
3 Garlic gloves, minced
3 Tablepoons of olive oil
2 teaspoons salt
1/2 teaspoon of freshly ground pepper
4 lamb chops
Mix all ingredients, coat lamb chops. Cover and marinate in the
fridge for 2 to 24 hours. On a hot, well-oiled grill, cook for 15
minutes.
Save the Children is one of my favorite charities. Most of us know the work they do in helping children in poverty-stricken areas of the world. Their commercials, showing the extremely distressing conditions these children live in, are familiar to most of us. But did you know that they also help children right here in the U. S.? They sponsor literacy programs, disaster relief, early childhood development and physical activity and nutrition programs. One of the things I like best about this organization is the ability to choose where you would like your donation to go--it gives donors the chance to support the programs that touch them the most.
I believe that every child deserves the chance to grow into a happy, healthy, productive citizen of the world. If you agree, I hope you will consider donating to this very worthy organization. www.savethechildren.com.
